Dry bamboo shoot is a traditional Naga veggie which can be stored for months or even years. The bamboo shoot is first shredded and dried in drier in a controlled envirinment to dehydrate all the moisture from the shoots, this ultimately can be stored in a container for months to be used as a delicacy for many of the Naga recipes. Dried bamboo shoots are not hard, but rather leathery. Once reconstituted and boiled until chewy-tender, dried bamboo shoots have a chewy-tenderness and pleasant sweetness that's not found in fresh or canned bamboo. They may be stir fried, used in soups and stews, and as toppings for noodle dishes like Japanese ramen or Vietnamese bun mang; they provide a pleasant, meaty, textural bite.
